Strawberry Pretzel Salad

Let me just say, I made this delicious dessert for a party we had last weekend and promptly forgot to pull it out of the fridge! It is SO easy to make, and is such a light, yummy addition to any party or gathering!

2 C pretzels, crushed

3/4 C unsalted Butter, melted

1 C and 3 tbsp sugar, divided

8 oz cream cheese (Again, I use vegan cream cheese), softened

8 oz whipped cream, thawed

6 oz (2 boxes) strawberry Jell-O)

2 C boiling water

2 oz frozen strawberries

Heat oven to 400

In a mixing bowl, combine crushed pretzels, melted butter and 3 tbsp sugar. Press into a 9×13″ pan and bake for 10 mins. Set aside to cool.

Fold together cream cheese, whipped cream and remaining sugar until combined. Spool over cooled pretzel crust to cover well. (Don’t leave any crust exposed or crust will become mushy)

Dissolved Jell-O in boiling water, Stir in frozen strawberries. They will thaw and will thicken the Jell-O. When it’s the consistency of egg whites, spoon it over the entire surface.

Chill until set. Cut into squares.
