Picky eaters?! Not with this! Trust me, and get them to try a bite and you’re guaranteed to find a winner! Serves 6-8
2 Tbsp EVOO
2 Tbsp balsamic vinegar
1 tbsp pure maple syrup
1 tsp dijon mustard
salt and pepper to taste
12 oz brussels sprouts, tough outer leaves pulled away (about 3 C)
1 medium shallot, thinly sliced (about 1/4 C)
1/4 C sweetened, dried cranberries
1/4 C coarsely chopped pecans
1 ripe pear, chopped (about 3/4 C)
Whisk together EVOO, vinegar, syrup and dijon in a medium bowl. Season to taste with salt and pepper.
Thinly slice brussels sprouts, discarding core. Stir together the brussels sprouts, sliced shallot, dried cranberries, pecans and pear. Pour the dressing over salad, and toss to combine.
