Another dinner creation by yours truly!
2 cans diced tomatoes
2.5 C corn
4 cups Onion/Pepper mix (I use the frozen bags from Kroger)
dash of cumin
crushed red pepper (If you like it spicy!)
1 tsp salt/pepper
dash of chili powder
2 tsp garlic powder
1.5 C cooked quinoa
Put everything except quinoa in pot, cook on low while quinoa cooks separately. Add quinoa to pot when completely cooked, spoon onto your choice of bread (The thicker the bread, the better it holds together. I use Square Artisan Bread. DO NOT USE LOAF BREAD! IT WILL GET SOGGY! Delicious!!
