Just in time for Cinco De Mayo!!!!
1 lb shrimp, shelled and deveined
2 Tbsp taco seasoning (I used a premade mix that includes: 1 tsp chili powder, 1.5 tsp smoked paprika, 1 tsp cumin, 1.5 tsp garlic powder, 1 tsp onion powder, 1/2 tsp red pepper flakes)
1/4 C vegan mayo (you can also use regular mayo)
juice from 1 lime
4 C shredded cabbage
2 Tbsp avocado or Coconut oil
1 head lettuce, leaves separated.
1 avocado cut into small bites
1/4 C cilantro
In a medium bowl, coat shrimp with taco seasoning
in large bowl, mix mayo, lime juice and whisk until thin. Add cabbage and mix well.
In large skillet, heat oil over medium heat. Add shrimp and cook through, about 4-5 mins.
Place lettuce leaves on plate and use as “shells”. Layer shrimp, slaw, avocado and cilantro. Serve and devour! =)
