Pumpkin Pudding

1 C sugar

1 can evaporated milk

1 tsp cinnamon

16 oz pumpkin

3 eggs

1/2 tsp nutmeg

1/2 tsp ginger

1/2 tsp salt

Beat all ingredients together. Pour into a 9×13 pan or 2 1/2 quart casserole dish.

Cut in 1/2 C butter with 1 yellow cake mix. Sprinkle on top. Cook at 350 for 45 minutes or untl set in middle.

Great warm and with a scoop of vanilla ice cream on top!
