Espresso Overnight Oats

2 Shots Espresso or 1/2 C cold brew coffee

1/2 C rolled oats (I used GF)

3/4 C milk (I use almond milk)

2 tsp maple syrup

1 Tbsp chia seeds

1 Tbsp cacao nibs

topping of choice (I use cacao powder)

Place all ingredients in airtight container and shake well to mix. Place in fridge for at least 2 hours or overnight. Shake again after an hour to continue to mix well. When you are ready to eat, stir and add favorite topping, heat up (or eat cold, whatever you prefer) and enjoy!
