Black Bean Chili Omelette

After years of being a vegetarian, and finding (or creating my own!) so many nutritious and delicious recipes for myself, I wanted to share some of these yummy ideas, in hopes that you can enjoy the same meals.
This dish can be served as breakfast, lunch or dinner. I usually make it for dinner as it keeps me full all night, and I don’t find myself rummaging through the pantry for snacks, a couple hours after dinner. 
Here is the recipe – you can modify it, as desired.

**If prepared as follows, it will be a little spicy**  

1/2 C – black beans 

1/2 C – Red Kidney beans 

1 8oz can low sodium tomato sauce 

1 8oz can meatless/vegetarian chili 

1 8oz can diced tomatoes 

1 tsp. Onion Powder

 1 tsp. Crushed Red Pepper 

1 tsp. Garlic powder 

black pepper (As much as you prefer) 


Pour all ingredients into pot and cook as you would regular chili (I use medium heat, stirring occasionally. 

Microwave one bag whole wheat/brown rice (I buy the kind you can steam in the bag)approx 4 minutes

While chili is cooking, place skillet over medium heat

 Add 1 tbsp Olive Oil to skillet 

3 egg whites 

1 whole egg 

Black Pepper

(Beat together, as if you’re making scrambled eggs) 

pour into skillet but DON’T stir – cook the eggs as if making an open faced omelette.

Cook about 5 minutes, or until edges start to brown.

Remove “omelette” from skillet, and place on plate.  

Put 1/4 C brown rice on top of open faced egg, with 1/2 C chili on top. Drizzle honey (Yes, honey. It’s delicious!) on top and enjoy!
