APPLE BUTTER LAMB CHOPS

I don’t eat meat but anytime I want to surprise my hubs with home cooked dinner this is my go – to! *Originally from Kristin Cavallari’s cookbook “True Comfort”*

2 racks of lamb

1 tsp Dijon mustard

1 TBSP chopped fresh rosemary

Himalayan salt/black pepper

1 TBSP Extra Virgin Olive Oil

2 TBSP apple cider vinegar

1/4 apple butter

1 tsp chopped fresh chives

Preheat Oven to 375

On baking sheet, rub lamb with mustard, rosemary, 1/2 tsp salt and 1/2 tsp pepper

In skillet on high heat, warm 1/2 TBSP olive oil. Sear the lamb on each side for about 3 mins or until browned. Remove from heat and place on baking sheet, bone side down.

In small bowl, mix remaining 1/2 tsp olive oil with apple cider vinegar, apple butter, and pinch of salt and pepper. Spread half this mixture all over racks of lamb. Roast for 20-25 mins until meat is cooked to your liking (25 mins will make it approx medium rare). Let meat rest for 15 mins before slicing into chops.

Drizzle remaining apple butter sauce over chops and garnish with chives.
