Burrito Bowls

**This is a favorite in my house!**

2 lbs chicken thighs (boneless/skinless)

1/2 C yogurt (I use plain greek yogurt)

1 1/2 tsp chili powder

1 1/2 tsp cumin

1 tsp smoked paprika

4 cloves garlic

2 tsp grated lime zest

1 1/2 tsp sea salt

black pepper (to taste)

2 C rice (We love lime flavored!)

1 1/2 C guacamole

1 1/2 C black beans

1 1/2 C salsa

1 1/2 Avocado cream (just mix 1 avocado, lime juice, 1/4 tsp garlic and 1/2 C cashews in a blender with 1 C water. Voila!)

Put chicken in ziploc bag. In small bowl mix yogurt, chili powder, cumin, paprika, garlic, lime, salt and pepper and whisk together. Pour sauce over chicken massaging into meat. Place bag, sealed, in fridge for one hour or up to overnight.

When ready to cook, warm pan over medium heat. Cook chicken for 3-4 mins each side until cooked through. Chop chicken and set aside.

Build burrito bowls by spooning 1/2 cup of rice into bowls and divide chicken, guacamole, salsa, beans and avocado cream among bowls.
